Almond Sponge Cake Layer

Use this as a model for all sponge cake layers made with the addition of ground nuts. Quantities for different kinds of nuts follow in the variations. I like to bake this as a single layer and split it afterward (instructions are in the cake recipes that use the layer), but you may also bake it in two separate tins; see the Note.
