Crunchy, sweet meringue layers may be used to make a festive dessert on their own or may be coupled with sponge or butter cake layers for a truly extravagant presentation. There are three types of meringue. Making ordinary meringue, also known as French meringue, involves whisking egg whites with part of the sugar used and folding in the rest. Swiss meringue calls for combining the egg whites with all the sugar and heating the mixture over simmering water until hot, dissolving the sugar at
