All good biscuits are addictive, but these are particularly dangerous.

As if their shatteringly crisp texture weren’t enough, their buttery flavour is accentuated and deepened by brown sugar. Unlike most cut out biscuits, these spread quite a bit while they’re baking.


  • 295 g plain flour
  • ½ teaspoon bicarbonate of soda
  • ¼ teaspoon


  1. Stir the flour, bicarbonate of soda and salt together and set aside.
  2. Beat the butter, brown sugar and vanilla with the paddle attachment of an electric mixer on medium speed until well mixed, about 1 minute. Beat in the egg and yolk one at a time, beating smooth between additions. Scrape the bowl and beater and beat again for 30 seconds.
