Method

  1. Place the eggs, puree, and sugar in a medium-sized bowl. Place the bowl over a pot of boiling water (bain-marie).
  2. While whisking constantly, cook the mixture until it thickens and has a texture similar to sour cream or mayonnaise. This will take about 10 minutes.
  3. Remove from the heat and whisk in the bloomed gelatin until it dissolves
