  1. In a stand mixer with the whisk attachment, whisk the egg whites, sugar, and cream of tartar together.
  2. Place the stand mixer bowl over a pot of boiling water to create a bain-marie.
  3. While constantly whisking, heat the egg white mixture until it reaches 79C (174F).
  4. Once you have reached 79C (174F), return the bowl to the stand mixer and whip
