  1. Soak the wheat bran in the milk overnight. Combine the flour and yeast. Add the bran-milk mixture, the honey, oil, and salt to the mixer, then add the flour and yeast. Mix with the dough hook attachment on low speed for 4 minutes and on medium speed for 4½ minutes. The dough should be slightly soft but with full gluten development. It will tighten up during bulk fermenta
