Method

  1. Combine the flours and yeast. Add the water, eggs, sugar, dry milk, baking powder, salt, and nutmeg to the mixer, then add the flours and yeast. Mix with the dough hook attachment on low speed for 2 minutes, or until the ingredients are well incorporated. Add the shortening and mix on medium speed for 8 minutes. Mix to the intense stage of gluten development.
