This variation is literally a quick twist on the ciabatta loaf and, with the addition of sesame or poppy seeds, it has a mildly nutty flavor. The twisted dough not only produces a rustic decorative pattern across the bread, but its structure lends itself nicely to what I refer to as the casual “twist-and-take” technique of sharing bread at a meal.
