Pain de mie is a white sandwich bread traditionally baked in a specially designed pan with a sliding lid, although regular bread pans can also be used. Its name translates from French to “crumb bread,” referring to its denser and finer crumb structure with a comparatively tender crust. This bread contains more sugar than most French breads (but certainly not nearly as much as mainstream commercial sandwich bread!) and contains some fat as well, so it keeps longer and freezes well.
