To make the basic red sauce, heat a large sauté pan with the olive oil and add the chopped onions. Sauté for 2 minutes and then deglaze by adding the wine. Continue to cook the onions until they are clear. Add all of the remaining ingredients and bring to a boil. Reduce the heat and cook at a low simmer for 1 hour. Remove about half (4 cups [1 kg]) of the sauce, and set aside to cool.
