Praline paste is a sweetened nut butter made with hazelnuts or almonds. It’s usually made from praline, which is a kind of candy made by cooking nuts in caramel. You can skip this step, however, by roasting the nuts and then grinding them with sugar in a food processor.

Ingredients

  • 2 cups hazelnuts, roasted and peeled as much as possible (see sidebar)
  • ½ cup sugar

Method

Grind the hazelnuts and the sugar in a food processor for about 4 minutes, or until the hazelnuts are oily. Scrape the food processor work bowl with a rubber spatula to incorporate any of the mixture that is clinging to the sides and bottom.
