This is straightforward, clean food. If you can’t get the Japanese panko crumbs, make your own from decent bread or buy good-quality breadcrumbs.

I don’t think I’ve ever known anyone who didn’t like crispy food, so be prepared for a plate of these to be demolished quickly.


  • 8 large green king prawns (shrimp), peeled and deveined with tails left intact

Halve the prawns lengthways and place in a bowl. Mix together the sea salt, shaoxing and sesame oil, and then toss the prawns with this seasoning. Marinate for 5 minutes.
