I’ve been serving this dish in my restaurants for years; it made the perfect start for a meal at XO. I promise you won’t believe how something so simple can be so good. It’s important to only use silken tofu, as the dish is as much about texture as flavour. Be careful with the tofu as it’s very delicate and will break up if you handle it too roughly. To prepare it, remove the lid and invert the tofu onto a board, and from there you can cut it into squares.
