Great for a lunch with a couple of other dishes, the earthiness of the spinach with the aroma of sesame is wonderful — this is the taste of Asia.
For a hot dish, stir-fry the spinach and then add the dressing.
In salted boiling water, blanch the spinach for 30 seconds, then refresh in iced water. Drain the spinach and squeeze out excess moisture.
To make the dressing, mix together the shaoxing, soy sauce, sesame oil and the chicken stock in a small bowl.
Put the spinach on a serving plate, drizzle with the dressing and sprinkle with the roasted sesame seeds to serve.<
