This is a fun idea. Take the leaves of Brussels sprouts, toss them in olive oil, then with red pepper, garlic, and Manchego cheese, and then bake them with fresh tomatoes and thyme. The Brussels sprouts become crisp and succulent, and the pizza is pure pleasure.
