Grey sole is a special fish. Practically no one except fishermen and Chinese restaurateurs seems to use it. It is a particularly fine fish, with the same flavor and texture profile as Dover sole! The grey sole’s flesh is delicate and flaky, has a low degree of fat, and is super tasty. It is terrific for sushi and, in this guise, marries with the blood orange, toasted pistachios, and oil. The final note of the mild, flavorful Fresno chiles rounds out the dish.
