A nice way to start a meal. Best, truly, in the middle of summer. I recommend using smallish zucchini that are very fresh, and you should use as many colors as you can find. The trick here is to grill the sliced zucchini. Once they have cooled, then you get to show off your knife skills to dice the cooked slices into the most uniform size possible. The rest of the dish is a slam dunk.
