This is really an innovative and, at the same time, traditional dish. What does it have to do with Italy? Not much; it does have a lot to do with me. So, I guess therein lies the dichotomy: Barbuto can be playful and adventuresome, classical and forward-looking at the same time.
I love nothing better than a ripe, perfect avocado. And there was a time when the red bell peppers of California were my go-to ingredient. It makes sense to invite these two into a salad. I think the Goddess
