A true classic of wintertime at Barbuto. The bitter, sharp, and almost inedible nature of radicchio has charmed us. Perhaps the bitterness implies healthful; at the very least it is full of vitamins and roughage. I have always adored pears. Comice, Bosc, Anjou are all incredible, and while they can be on the sweet side, slightly underripe they marry well with radicchio. The frisée is the fun part of the dish.
