Wild boar is really popular near the town of Pitigliano, Italy. The boar must be plentiful in the area, because every restaurant serves a version. In America, we seem to have enclaves of wild boar; we do see a good population in California. One of my craziest memories of Philippe Jeanty, when we worked together at Domaine Chandon, was his fervent glee at receiving someone’s hunt, a nice sixty-pound (27 kg) boar. He taught me the basics of butchery, and that has stuck.
