Here is a good example of using everything: One day I discovered my chefs had ordered so many ribs that it would be days before we could sell them all! What to do? I ordered the chefs to cook them on the bone, let them sit in the cooking liquid overnight, then the next day, strip the meat from the bone and make a rich sauce or ragù. And, of course, it was the best pork sauce anybody had ever tasted. So, from calamity to delight!
