Properly sourced red snapper is truly a wonderful product, perhaps the best fish in Florida.

Ingredients

  • 4 (4-ounce/115 g) red snapper fillets, skin on
  • Olive oil

Method

  1. Rinse the fillets and pat dry. Rub with olive oil and season with sea salt.
  2. Put the lentils in two small pots (one type in each pot). To each pot, add 1 clove garlic, 1½ teaspoons butter, and 1 teaspoon sea salt, along with 1¼ cups cold water.
