The best game fish is a steelhead. When you hook one, the fight is tremendous, which is probably why steelheads taste so good. The flesh is a vibrant shade of orange-red and it is delicate and meaty at the same time. Steelhead season usually lasts about two months in California, and the fishermen (many from local native tribes, who make their year’s wage tackling this very hard job) bring a meager amount to the marketplace.
