American-raised lamb chops are a wonder. These days lamb consumption is on the wane, sadly. I imagine that back in the day, sheep were a valuable commodity. They were a triple threat, providing wool, grazing to help claim pasture, and of course meat. One hundred years ago, Americans ate three times the amount of lamb that we eat today. I think in part we have lost a taste for the meat, and we regard it as gamey. This is to some extent the fault of the butchers, who slaughter lambs that are
