This is a decadent dish, worthy of a very special occasion. The gratin of Swiss chard and bacon is almost a meal unto itself, and the pork is something you will never forget. It is true mountain food, great after a long hike or skiing the cold slopes of the Dolomites.

The salty anchovies and capers are a scrumptious umami addition to the crunchy breadcrumb exterior of the Milanese. You can also use veal chops here; this would make it a more authentic and classic dish.
