A good party dish. This is a fun take on the proverbial porchetta recipe, perfect for those who either eschew pork or prefer lamb. Lamb is rich meat that takes well to roasting in this fashion. At Barbuto we can place a dish like this in the center of the kitchen table, and then the folks can grab the dish and serve themselves. It really makes it a party!
