This is pure Barbuto! I think we concocted this as a lunch item very early on. It has remained on the daytime menu since. When devising the original menu for Barbuto, I really aimed for recipes that were dead simple yet filled with flavor and nuance. Dishes that captured the essence of the ingredients, that harmonize with a simple “do re me.” And here you have that essence, a grilled hanger steak, some garden-fresh arugula, grated Parmesan.
