I love the Union Square Greenmarket, an amazing source of everything vegetable. One of the recent varieties of turnips I’ve found there are heirloom Japanese button turnips. These are sweet and gorgeous and can be eaten raw or cooked. I love them simply roasted in the oven with sea salt and butter and then tossed with an anchovy butter.

Anchovies make almost anything taste better, and turnips are especially enhanced by their wonderful flavor.
