  • 2 tablespoons fresh lemon juice

Method

In a stand mixer with a whisk attachment, combine the egg yolks, lemon juice, and ¼ teaspoon sea salt.

Smash the garlic with the flat side of a chef’s knife and add to the mixer.

Whip for 3 minutes.

With the motor running, slowly drizzle in the olive oil until the mixture achieves a mayo-like consistency.

Add more salt, taste, and add finely ground black pepper.<
