Tynan, Barbuto’s brilliant mixologist, tried making an elaborate cocktail with fresh watermelon juice but kept coming up short. After that, he decided to let the fruit speak for itself. Fresh watermelon juice is delightfully delicious and benefits from a hint of acid from the lime juice. Blanco tequila is recommended, but any clear spirit works well.
