Panna cotta is a very special dessert that is a great introduction to pastry making. It has all the elements one needs to create wonderful desserts: You will make a caramel sauce and finally a frozen concoction that will wow everyone. Panna means cream, and cotta is the process of freezing. I find this recipe to be universal; you can substitute the caramel with chocolate, fruit puree, or butterscotch.
