Cook the spareribs for 45 minutes in gently simmering water.
For the marinade, peel the onions and garlic and finely chop them. Combine all of the marinade ingredients. Reserve some marinade for serving. Cover the spareribs with the remainder of the marinade and chill for 12 hours.
Arrange the ribs over gentle heat, allow them to caramelise at their leisure turning them regularly. Roll them in reserved marinade before serving.
