Dry the capers with paper towel and place on a non-stick baking mat. Place on a baking tray and dry in a dehydrator at 60°C (315°F) for 4 hours. Alternatively, place in the oven on the lowest temperature and leave until completely dry. Remove and allow to cool. Store in an airtight container for up to 2 weeks.
