White Anchovy Sticks with Tomato and Paprika

Ingredients

  • 45 g ( oz) freeze-dried tomato powder (see Note)
  • 5 g ( oz) smoked paprika
  • 30 g (1 oz/½ cup) panko breadcrumbs (see Note)
  • 5 g ( oz) sea salt flakes
  • 12 marinated white anchovy fillets
  • 4 bamboo skewers

Method

Place the tomato powder, paprika, breadcrumbs and salt in a bowl and combine.

Roll each anchovy tightly, then skewer 3 rounds onto each skewer. Roll in enough tomato powder to lightly coat. Serve immediately.
