Avocado Purée

Ingredients

  • 1 ripe avocado
  • 1 teaspoon lemon juice
  • 2 teaspoons extra virgin olive oil
  • sea salt and freshly ground black pepper

Method

Peel the avocado and remove the stone. Pass the flesh through a fine sieve. Stir in the lemon juice and oil and season with salt and pepper. Set aside.
