• 50 ml ( fl oz) extra virgin olive oil
  • 50 g ( oz) brown onion, diced
  • 200 g (7 oz) desiree potato, diced
  • 1 quantity cod
  • 40 ml ( fl oz) infused milk (reserved from cod)
  • sea salt and freshly ground black pepper


Heat the oil in a small saucepan over medium heat. Add the onion and cook for 1 minute. Add the potato and enough water to cover, then reduce the heat to low and cook for 15 minutes or until the potato is tender. Strain, then transfer the potato to a food processor.

Add the cod and the reserved cod milk and process until smooth. Season with salt and pepper.
