Method

Heat a saucepan of water to 63°C (145°F). Gently place the eggs into the pan and cook for 1½ hours. Using a slotted spoon, remove the eggs. Use the back of a small knife to crack each one open — be careful as you don’t want to break the yolks. Serve immediately.
