Crisp Garlic


  • 2 garlic cloves, thinly sliced lengthways using a mandolin
  • ½ teaspoon sea salt flakes
  • 40 ml ( fl oz) vegetable oil


Combine the garlic with the salt in a bowl and set aside for 10 minutes to draw out the moisture, then rinse off the salt and pat dry with paper towel. Heat the oil in a small frying pan over medium heat. Cook the garlic for 3 minutes or until golden and crisp. Remove from the pan and drain on paper towel. Set aside.
