  • 18 live yabbies
  • 50 g ( oz) unsalted butter

Method

Bring a large saucepan of water to the boil. Cook the yabbies for 1 minute. Drain and refresh in iced water, then drain again. Remove the tail meat, discarding the shells and claws. Melt the butter in a large frying pan over medium heat and cook the yabbies for 2 minutes. Remove from the pan and keep warm. Reserve the pan juices.
