Ingredients

  • 25 g ( oz) coriander seeds
  • 15 g (½ oz) black peppercorns
  • 20 g (¾ oz) cardamom seeds
  • ½ cinnamon stick
  • ½ star anise
  • 7 g (¼ oz) caster (superfine) sugar

Method

Preheat the oven to 170°C (325°F/Gas 3). Roast the spices for 8 minutes. Transfer to a spice grinder and finely grind. Combine with the sugar, then pass through a fine sieve. Set aside.
