  • ¾ head cauliflower (about 600 g/1 lb 5 oz)
  • 1 quantity spice mix
  • sea salt flakes

Method

Grate the cauliflower, tops only, so it resembles couscous. Discard the stem. Place the cauliflower in a bowl and mix through the spice mix. Season with salt and set aside.
