Place the dried fruit and 400 ml (14 fl oz) water in a saucepan and bring to the boil. Reduce the heat to medium and simmer for 15 minutes or until broken down, adding extra water, if necessary, to keep the fruit just covered. Transfer to an upright blender and blend until smooth. Return to the pan and place over medium heat. Add the agar agar and cook, stirring occasionally, until it reaches 90°C (194°F). Transfer to a small container and refrigerate for 1½ hours or until set. This can be made 1 day in advance.
