  • β…” bunch (60 g/2ΒΌ oz) basil, leaves picked
  • sea salt flakes

Method

Blanch the basil in lightly salted boiling for 1 minute. Drain and refresh in iced water, then drain again and cool. Transfer to an upright blender, add 300 ml (10Β½ fl oz) water and blend until smooth. Pass through a fine sieve, discarding the solids. Set aside.

This can be made 1 day in advance and stored in an airtight container in the fridge.
