Place 3 piles of pea crumbs onto each of 6 plates. Arrange 2 snow pea stacks at opposite ends of the plate. Arrange 2 piles of peeled peas on opposite ends of each plate. Pipe 3 small dots of the goat’s curd dressing onto each plate. Pipe 3 small dots of pea purée onto each plate. Place a pea fondant on top of each pea crumb pile and rest a piece of black sesame glass on top. Garnish with the red garnet shoots.
