  • 1 bunch (50 g/ oz) mint, leaves picked

Method

Blanch the mint in boiling water for 1 minute. Drain and refresh in iced water. Drain again and squeeze out the excess water. Place the leaves in an upright blender with the oil and blend until smooth. Pass through a fine sieve. Set aside. This recipe makes more than you will need.
