Ingredients

  • 120 g ( oz) goat’s curd
  • 40 ml ( fl oz) extra virgin olive oil
  • freshly ground white pepper
  • 2 teaspoons lemon juice

Method

Place the goat’s curd and oil in an upright blender and blend until smooth. Season with white pepper and lemon juice. Transfer half of the dressing to a piping bag fitted with a 2 mm (1/16 inch) plain nozzle. Set aside.
