Ingredients

  • 40 g (1½ oz) Dijon mustard
  • 20 ml (⅔ fl oz) sherry vinegar
  • 40 ml (1½ fl oz) vegetable oil
  • 20 ml (⅔ fl oz) extra virgin olive oil

Method

Whisk the mustard and vinegar in a bowl until combined. While whisking, gradually pour in the oils, whisking until emulsified. Place in a sauce bottle and set aside.
