  • 1 green apple, peeled, halved and core removed
  • 6 Sicilian green olives, pitted
  • 1 sprig dill, leaves picked
  • 2 sprigs flat-leaf (Italian) parsley, leaves picked
  • 2 teaspoons lemon juice
  • 20 ml ( fl oz) extra virgin olive oil
  • sea salt flakes


Finely dice the apple. Dice the olives into 2 mm (1/16 inch) cubes. Chop the dill and parsley leaves and combine with the apple and olive. Dress with the lemon juice and oil and season with salt. Set aside.
