Red Mullet

Ingredients

  • 12 red mullet fillets, skin on and pin-boned
  • sea salt flakes
  • 2 teaspoons olive oil

Method

Season the mullet with salt. Heat the oil in a non-stick frying pan over high heat. Cook the mullet, skin-side down, for 1 minute. Turn the fish, then remove from the pan. Set aside and keep warm.
