Baby Abalone

Ingredients

  • Β½ brown onion, chopped
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 2 garlic cloves
  • 3 fresh bay leaves
  • 5 sprigs thyme
  • 20 black peppercorns
  • 300 ml (10Β½ fl oz) white wine
  • 50 ml (1ΒΎ fl oz) white wine vinegar
  • peel of 1 lemon, white pith removed
  • 2 baby abalone
  • sea salt flakes

Method

Place the vegetables, garlic, herbs, peppercorns, wine, vinegar, lemon peel and 1.5 litres (52 fl oz) water in a large saucepan and bring to the boil. Add the abalone, return to the boil, then reduce the heat to low and simmer for 15 minutes. Remove the abalone from their shells and cut into 2 mm (1/16 inch) thick slices. Serve immediately.
